VINIFICATION
The wine undergoes a long maceration process under controlled temperature conditions to extract optimal flavors and aromas. It is then matured for eight months in Allier oak barrels, which imparts subtle complexity and enhances its character.

WINE PROFILE AND PAIRING
This wine boasts a lively ruby red color, enticing the senses with its intense and fruity aroma, complemented by delicate notes of spices. On the palate, it is sturdy and warm, offering a full-bodied experience with lively tannins that add depth and structure. It beautifully enhances the pleasure of enjoying typical Calabrian dishes like macaroni with lamb gravy, pork chop, pork sausages, and oven-roasted goat.

VINIFICATION
The grapes are harvested manually when they have reached optimal ripeness. The grapes from the various vineyards are fermented separately in concrete tanks. Fermentation is spontaneous and lasts about 10 days. After racking, the Silene ages in concrete tanks on its fine lees for about a year. Before bottling, the different batches are blended. After bottling, the Silene rests in the cellars for an additional 3 months.

WINE PROFILE AND PAIRING
Medium-bodied wine, notes of ripe black fruit, earthy tones, and a touch of floral present on the nose, soft and very elegant palate.

This wine pairs exceptionally well with roasted meats like leg of lamb, porchetta, and lamb chops, as well as seasoned cured meats. It complements rich pasta dishes and hearty meat sauces beautifully. Additionally, it's perfect for tomato-centric dishes such as pizza. When it comes to cheese, it matches wonderfully with aged varieties like Grana Padano, Manchego, Parmesan, Pecorino

12 months in stainless steel and 6 months in bottle

WINE PROFILE AND PAIRING
This wine presents an intense and spicy bouquet with evident notes of cherry and red fruits, complemented by herbaceous hints. On the palate, it is elegant, soft, and mineral, with tannins that are not aggressive. It has a savory and persistent finish. It pairs excellently with red meats, sausages, and medium-aged hard cheeses. When served slightly cooler than room temperature, it is also an ideal match for tuna tartare.
