VINIFICATION
The grapes are gently pressed, and the must is left to ferment for about 10/15 days at controlled temperature.
WINE PROFILE AND PAIRING
Light-medium bodied, herbaceous and vinous when young, it gains an intriguing aroma and taste of undergrowth. Ideal for rustic regional dishes, paired well with moist white and red meats, grilled vegetables, and perfect also with guazzetto and cioppino.

VINIFICATION
The grapes (Pinot Noir, Pinot Blanc, Chardonnay) refine for several months on their own yeasts, and it's at the end of winter when the blending takes place. Following this is the start of the second, crucial, fermentation: the one in the bottle. The subsequent aging of the wine in contact with the yeasts lasts a minimum of 24 months.
WINE PROFILE AND PAIRING
To the nose, the notes of yeast are well pronounced, while the sensations of fruit are more delicate. Whether it's red, dry, or tropical fruit. On the palate, it is fresh, with good structure, and harmonious. The Pink Brut Rosé is ideal as an aperitif but also pairs well with flavorful appetizers, first courses of fish, meat, or vegetables. It is excellent with fish-based main courses. It excels enjoyed away from meals.

VINIFICATION
Harvest for this wine typically occurs between the end of September and early October. After harvesting, the grapes undergo maceration for approximately 10 days in temperature-controlled stainless steel vats. Following maceration, the wine ages in steel tanks until it is ready for bottling.
WINE PROFILE AND PAIRING
This wine displays a deep red color. Its bouquet is rich with aromas of red and black berries, complemented by subtle herb and spice notes. On the palate, it offers a pleasant experience, characterized by abundant fruit flavors alongside hints of violets. It has a medium-full body, with a soft, fresh, and rounded texture. The wine features good acidity, medium-low tannins, and a pleasing volcanic minerality. Ideal pairings include dishes with tomato sauces and spicy foods, such as Bucatini all'Amatriciana.
