VINIFICATION
Vinification involves gentle pressing, fermentation in steel tanks at 15°C, and 5 months on the fine lees. Aging consists of 6 months in steel tanks and 3 months in the bottle.

Pale straw yellow with greenish reflections
Aromas of acacia, broom, wildflowers, and chamomile with typical notes of bitter almond
Dry, savory, mineral, with fruity hints of green apple and a pleasantly almond-like finish

VINIFICATION
Maceration with the skins for 10-15 days with temperature control (délestage and pumping over of the must). Malolactic fermentation. 7 months in glazed concrete tanks. 20% of the mass matures in tonneaux for 7 months.
